  • 2 cups shredded zucchini (squeezed)
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • Canola oil for cooking

Instructions

  1. Grate zucchini using a box grater and squeeze out excess moisture using a mesh bag or cheese cloth.
  2. In a mixing bowl, combine the squeezed zucchini with Panko breadcrumbs, eggs, cheeses, minced garlic, salt, and pepper. Mix until well blended.
