  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, combine grated zucchini, vegetable oil, eggs, and vanilla extract until well mixed.
  4. Gently fold the dry ingredients into the wet mixture using a rubber spatula until just combined; add chopped walnuts.
  5. Divide batter into prepared pans and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  6. Cool in the pan for about 15 minutes before transferring to wire racks.
