Ingredients

  • 300 g white bread flour
  • 200 g plain (all-purpose) flour
  • 10 g fast action/instant yeast
  • 50 g caster/granulated sugar
  • 120 ml aquafaba
  • 200 ml unsweetened non-dairy milk
  • 200 g vegan block butter or 160ml mild olive oil

Instructions

  1. Start by mixing the flours, yeast, salt, and sugar in a stand mixer bowl.
  2. Add aquafaba and non-dairy milk; mix until a rough dough forms.
  3. Knead on medium speed until smooth; then add the vegan butter or olive oil.
  4. Cover the dough and refrigerate overnight to rise.
  5. Shape the dough into one loaf or pull-apart buns after it has doubled in size.
  6. Allow to rise again before brushing with glaze and baking at 180°C (350°F) for about 20 minutes.
