  • ½ cup chopped prunes
  • ¼ cup candied citrus peel
  • ¼ cup glace fruit mix
  • ½ cup glace mixed cherries
  • 1 apple, grated
  • 1 carrot, grated
  • Zest and juice of 1 orange
  • 1 cup all-purpose flour
  • ½ cup softened butter
  • 1 cup brown sugar
  • 1 egg
  • For the Apple Juice Butter Sauce: ½ cup butter, 1 cup granulated sugar, ½ cup heavy cream, and 3 tablespoons apple juice

Instructions

  1. In a large bowl, combine sultanas, prunes, candied peel, glace fruit mix, and halved cherries. Add grated apple and carrot along with orange zest and juice. Stir well and let sit for at least one hour or overnight.
  2. Prepare the pudding basin by lining it with parchment paper.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  4. Cream softened butter and brown sugar until crumbly; add egg and mix until smooth.
  5. Fold in fruit mixture into the butter-sugar mixture followed by dry ingredients until just combined.
  6. Pour batter into the prepared basin and cover tightly with parchment paper and foil.
  7. Steam for about 3½ to 4 hours in a pot of simmering water (do not let water touch the basin).
  8. Allow cooling slightly before unmolding onto a serving plate.
  9. For the sauce, melt butter in a saucepan; whisk in sugar until gritty then add cream and bring to boil before stirring in apple juice.
