  • 1 tsp baking soda
  • 1 tsp salt
  • 2 ounces cream cheese, at room temperature
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1 1/2 tsp pure vanilla extract
  • 2 egg yolks
  • 2 cups semi-sweet chocolate chips

Instructions

  1. In a medium bowl, whisk together gluten-free flour, xanthan gum (if necessary), baking soda, and salt. Set aside.
  2. In a stand mixer, combine cream cheese and melted butter; mix in brown sugar and white sugar until smooth (about 2 minutes).
  3. Add egg yolks and vanilla extract one at a time while mixing on low-medium speed until well combined.
  4. Gradually add dry ingredient mixture to wet mixture; beat on low speed until just combined.
  5. Gently fold in chocolate chips.
  6. Cover dough and chill in the refrigerator for at least 4 hours or up to 4 days.
  7. Preheat oven to 375°F (190°C) and prepare cookie sheets with parchment paper.
  8. Scoop dough onto prepared sheets, spacing evenly apart.
  9. Bake for about 11-12 minutes or until edges are set; let cool before transferring to racks.
