Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream softened butter with white and brown sugars until light and fluffy.
  3. Add egg, molasses, and vanilla extract; mix until smooth.
  4. In another bowl, whisk together flour, baking soda, ground ginger, salt, ground cloves, and allspice. Gradually incorporate dry ingredients into the wet mixture.
  5. For the coating, combine white sugar with ground cinnamon and additional ground ginger.
  6. Roll dough into balls and coat with the sugar mixture before placing on a parchment-lined baking sheet.
  7. Bake for 9 minutes or until edges are set and centers remain soft.
