Ingredients

  • 2 eggs
  • 1/2 avocado, sliced
  • 1/2 cup mushrooms, sliced
  • 1 cup fresh spinach
  • 2 slices halloumi cheese
  • 1 tomato, halved
  • 1 tbsp olive oil or butter
  • Salt and pepper to taste
  • Chili flakes to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat oil in a non-stick pan over medium heat. Crack in the eggs and fry sunny-side up until whites are set and yolks remain runny. Season with salt and chili flakes.
  2. In another pan with olive oil, sauté sliced mushrooms over medium-high heat for about 5-7 minutes until golden brown. Add salt and pepper.
  3. Add fresh spinach to the mushroom pan and sauté for another 1-2 minutes until wilted.
  4. Grill halved tomatoes cut-side down and halloumi slices in a hot grill pan for 1-2 minutes per side until golden brown.
  5. Arrange all components on a plate, top with avocado slices, and garnish if desired.
