- 1 large bunch curly kale (8 cups chopped)
- 2 ripe peaches, sliced
- 1 cup fresh blueberries
- 1 cup cooked quinoa
- 1/3 cup crumbled feta cheese
- 1/4 cup sliced almonds (toasted)
- 2 tablespoons olive oil
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- Honey (or maple syrup)
- 1 small clove garlic, minced
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- Freshly ground black pepper to taste
Instructions
- In a large bowl, massage chopped kale with olive oil and salt for 2–3 minutes until tender.
- In a small bowl, whisk together remaining olive oil, lemon juice, honey (or maple syrup), minced garlic, Dijon mustard, salt, and pepper.
- Add cooked quinoa to the massaged kale with half of the dressing; toss well.
- Gently fold in peaches, blueberries, red onion, and mint leaves.
- Top with feta cheese and toasted almonds.
- Drizzle remaining dressing just before serving.
