Ingredients

  • 1 large bunch curly kale (8 cups chopped)
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1 cup cooked quinoa
  • 1/3 cup crumbled feta cheese
  • 1/4 cup sliced almonds (toasted)
  • 2 tablespoons olive oil
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • Honey (or maple syrup)
  • 1 small clove garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • Freshly ground black pepper to taste

Instructions

  1. In a large bowl, massage chopped kale with olive oil and salt for 2–3 minutes until tender.
  2. In a small bowl, whisk together remaining olive oil, lemon juice, honey (or maple syrup), minced garlic, Dijon mustard, salt, and pepper.
  3. Add cooked quinoa to the massaged kale with half of the dressing; toss well.
  4. Gently fold in peaches, blueberries, red onion, and mint leaves.
  5. Top with feta cheese and toasted almonds.
  6. Drizzle remaining dressing just before serving.
