  • 2 tbsp unsalted butter (melted)
  • 0.5 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter (cold and cut into small pieces)
  • 0.25 cup granulated sugar (for extra sweetness, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream softened butter with both sugars until light and fluffy. Beat in the egg and vanilla extract, then gradually add flour and baking powder until just combined.
  3. Press half of the cookie dough into the bottom of the prepared pan.
  4. In another bowl, whisk together lemon juice, granulated sugar, flour, salt, eggs, and melted butter until smooth. Pour over the cookie crust.
  5. For the crumble topping, mix flour and sugar in a bowl, incorporate cold butter pieces until crumbly, then sprinkle over the lemonade filling.
  6. Bake for 40–45 minutes until golden brown on top and set in the center. Allow to cool completely before slicing.
