  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn (drained)
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • Plain Greek yogurt or sour cream (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Wash sweet potatoes and pierce them several times with a fork. Place directly on the oven rack.
  2. Bake for 45–50 minutes until fork-tender.
  3. While baking, heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent.
  4. Stir in minced garlic and cook for an additional 30 seconds.
  5. Add ground turkey to the skillet and cook until browned. Season with smoked paprika, chili powder, cumin, salt, and pepper.
  6. Mix in black beans, corn, and diced tomatoes; simmer for about 5–7 minutes.
  7. Remove sweet potatoes from the oven, slice open lengthwise, and mash the flesh slightly.
  8. Spoon the turkey mixture into the sweet potatoes and top with shredded cheese.
  9. Return to oven for another 5 minutes or until cheese melts.
  10. Garnish with fresh cilantro before serving warm.
