Instructions
- Preheat the oven to 400°F (200°C). Wash sweet potatoes and pierce them several times with a fork. Place directly on the oven rack.
- Bake for 45–50 minutes until fork-tender.
- While baking, heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent.
- Stir in minced garlic and cook for an additional 30 seconds.
- Add ground turkey to the skillet and cook until browned. Season with smoked paprika, chili powder, cumin, salt, and pepper.
- Mix in black beans, corn, and diced tomatoes; simmer for about 5–7 minutes.
- Remove sweet potatoes from the oven, slice open lengthwise, and mash the flesh slightly.
- Spoon the turkey mixture into the sweet potatoes and top with shredded cheese.
- Return to oven for another 5 minutes or until cheese melts.
