  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 4 tablespoons butter (for pudding)
  • 1 cup dark brown sugar
  • 2 eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Sea salt flakes (for garnish)
  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • 1 cup 35% cream (for caramel sauce)
  • 1 teaspoon kosher salt (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 11 x 8-inch casserole dish.
  2. In a bowl, combine chopped dates and baking soda. Scald the milk in a saucepan, pour it over the dates, and set aside to cool for 15 minutes.
  3. Mix flour, baking powder, and salt in one bowl; beat eggs in another. In a food processor, blend eggs, brown sugar, butter, and vanilla until smooth. Gradually add the dry ingredients followed by the date mixture until well combined.
  4. Pour batter into the prepared dish and bake for about 30 minutes or until set.
  5. While baking, prepare the Salty Caramel Sauce by melting butter in a saucepan and stirring in brown sugar and salt until dissolved. Add cream and simmer until thickened.
  6. Once baked, poke holes in the pudding and drizzle with one-third of the caramel sauce; let soak for about 15 minutes before serving.
  7. Garnish with sea salt flakes before serving warm with whipped cream.
