  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water
  • Garnish: chopped green onions and sesame seeds

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Sear the beef belly pieces until browned on all sides (about 5–7 minutes). Remove from the pan and set aside.
  2. In the same pan, sauté minced garlic and sliced ginger for 1–2 minutes until fragrant.
  3. Return the seared beef belly to the pan, adding light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well to coat the beef.
  4. Bring to a boil, then reduce heat to low. Simmer uncovered for 1 to 1½ hours until the beef is tender and the sauce thickens into a sticky glaze.
  5. Taste and adjust seasoning if needed before serving hot, garnished with chopped green onions and sesame seeds.
