Ingredients
- 6 large eggs
- 2 tbsp mayonnaise
- 1 tbsp spicy brown mustard
- 3 drops red food dye (or beet juice)
- 12 medium cocktail olives (with pimentos)
- Salt & pepper to taste
Instructions
- Preheat oven to 350°F (175°C) if using bread; skip if using crackers.
- Place eggs in a pot of cool water, bring to boil, and cook for 20 minutes. Transfer eggs to ice water for 2-5 minutes before peeling.
- Cut eggs in half lengthwise and remove yolks into a bowl. Use a mesh strainer to create a smooth filling by pushing yolks through.
- Mix yolks with mayonnaise, mustard, salt & pepper, and red dye or beet juice until creamy.
- For bread bases, cut circles from slices and toast in the oven; if using crackers, skip this step.
- Cut holes in egg whites for olive placement. Fill each egg half with the yolk mixture and top with an olive slice.
