  • 50g granulated sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs (room temperature)
  • 565g all-purpose flour
  • 850g diced apples
  • 190g unsalted butter (for filling and frosting)
  • 280g brown sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 30g unsalted butter (for apple filling)
  • 1 Tbsp corn starch
  • 115g unsalted butter (for frosting)
  • 225g cream cheese (at room temperature)
  • 250g powdered sugar (sifted)
  • 12 Tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. Prepare the dough: Combine lukewarm milk and sugar in a bowl; sprinkle yeast on top and let sit until frothy. In a stand mixer, combine flour and salt. Mix in the yeast mixture along with eggs and softened butter. Knead until smooth; let rise for about an hour until doubled.
  2. Make the apple filling: Melt butter in a skillet, add diced apples, sugar, cinnamon, salt, and cornstarch; cook until apples are tender. Let cool.
  3. Assemble the rolls: Roll out dough into a rectangle. Spread softened butter over it, sprinkle with brown sugar mixture and cooled apple filling.
  4. Roll tightly into a log and cut into 12 pieces; place in greased baking dish to rise again.
  5. Bake at 350°F (175°C) for about 25-30 minutes until golden brown.
  6. Prepare frosting: Beat together cream cheese and butter; gradually add powdered sugar and cream until desired consistency.
  7. Frost warm rolls before serving.
