- 1 (4.5 lb) lamb shoulder, bone-in
- 6 cloves garlic, minced
- 2 tbsp Dijon mustard
- 2 tbsp whole grain mustard
- 3 tbsp honey
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme leaves
- 1 tsp ground black pepper
- 2 tsp sea salt
Instructions
- Preheat your oven to 300°F (150°C).
- Pat the lamb shoulder dry with paper towels.
- Season generously with sea salt and ground black pepper on all sides.
- In a mixing bowl, combine minced garlic, Dijon mustard, whole grain mustard, honey, rosemary, thyme, black pepper, and sea salt.
- Mix until well combined.
- Use a basting brush to generously coat the prepared glaze over the entire surface of the lamb shoulder.
- Reserve some glaze for basting during roasting.
- Place the glazed lamb shoulder in a roasting pan.
- Insert a meat thermometer into the thickest part of the meat (avoiding bone).
- Roast in preheated oven until internal temperature reaches about 145°F (63°C), approximately 4-5 hours.
- Baste with reserved glaze every hour.
- Once done, remove from oven and let rest for at least 20 minutes before carving.
