  • 2 tablespoons capers, drained
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Blanch the cauliflower in a large pot of salted boiling water for 2–3 minutes until tender yet crisp. Drain and rinse under cold water.
  2. In a small bowl or jar, whisk together olive oil, vinegar, lemon juice, mustard, salt, and pepper to create the dressing.
  3. In a large bowl, combine blanched cauliflower, olives, capers, red onion, cherry tomatoes, and parsley.
  4. Pour the dressing over the salad mixture and toss gently to coat. Allow it to rest for 10–15 minutes before serving for optimal flavor melding.
