  • 15 oz pumpkin puree
  • 1/4 cup salted caramel topping
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 16 oz cream cheese (softened)
  • 1/2 cup salted butter (room temperature)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 9 oz jar salted caramel topping (optional)
  • 2 tbsp coarse salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together eggs, brown sugar, vegetable oil, pumpkin puree, and salted caramel until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, and pumpkin pie spice. Gradually add dry ingredients to the wet mixture until just combined.
  4. Pour batter into the prepared pan and bake for 36 minutes or until a toothpick comes out clean.
  5. While cooling, prepare the frosting by beating cream cheese with softened butter and vanilla until smooth. Gradually mix in powdered sugar.
  6. Once the cake has cooled completely, frost it with cream cheese frosting and drizzle additional salted caramel on top if desired.
