- 16 oz cream cheese (softened)
- 1/2 cup salted butter (room temperature)
- 1 tsp vanilla extract
- 2 cups powdered sugar
- 9 oz jar salted caramel topping (optional)
- 2 tbsp coarse salt (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together eggs, brown sugar, vegetable oil, pumpkin puree, and salted caramel until smooth.
- In another bowl, combine flour, baking powder, baking soda, and pumpkin pie spice. Gradually add dry ingredients to the wet mixture until just combined.
- Pour batter into the prepared pan and bake for 36 minutes or until a toothpick comes out clean.
- While cooling, prepare the frosting by beating cream cheese with softened butter and vanilla until smooth. Gradually mix in powdered sugar.
- Once the cake has cooled completely, frost it with cream cheese frosting and drizzle additional salted caramel on top if desired.
