Ingredients

Scale
  • 240 g stone-ground grits
  • 960 ml chicken broth
  • 240 ml heavy cream
  • 225 g large shrimp, peeled and deveined
  • 2 red snapper fillets (about 170 g each)
  • 1 tablespoon Cajun seasoning
  • 15 ml olive oil
  • 14 g unsalted butter
  • 2 garlic cloves, minced
  • 60 g shredded cheddar cheese

Instructions

  1. In a medium saucepan, bring chicken broth to a boil. Gradually whisk in grits, reduce heat, and cook uncovered for 20-25 minutes until thickened. Stir in heavy cream, butter, and cheese; season to taste.
  2. In a skillet over medium-high heat, mix olive oil and butter. Add minced garlic, then shrimp seasoned with Cajun spices; cook until pink and opaque.
  3. Season red snapper fillets with Cajun spice; in the same skillet, cook until golden brown on both sides.
  4. Prepare the sauce by sautéing garlic in butter; add seasoning and broth; simmer before mixing in heavy cream and Parmesan until smooth.
  5. Serve warm grits topped with shrimp and snapper, drizzled generously with sauce.
