  • 3 cups finely chopped red bell pepper
  • 1 cup finely chopped green bell pepper
  • 1/4 cup finely chopped jalapeño pepper
  • 1 cup apple cider vinegar
  • 5 cups white sugar
  • 1 1/2 packages SURE-JELL powder pectin

Instructions

  1. Sterilize six 8-ounce canning jars and lids according to instructions.
  2. In a large saucepan, combine red bell peppers, green bell peppers, jalapeños, apple cider vinegar, and Sure-Jell pectin. Bring to a rolling boil while stirring constantly.
  3. Quickly add sugar and return to a rolling boil for 2-3 minutes. Remove from heat and skim off foam.
  4. Ladle the jelly into prepared jars, filling to 1/4 inch from the top. Secure lids tightly.
  5. Process jars in hot water canner for five minutes; allow them to cool completely after removal.
