  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice mix
  • 100 grams powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 2 tablespoons maple syrup (for glaze)

Instructions

  1. Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit) and prepare a small springform pan by greasing it and dusting with flour.
  2. In a mixing bowl, beat the eggs with brown sugar until fluffy. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix until combined.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined.
  4. Pour the batter into the prepared springform pan and bake for about 25 minutes. Cover lightly with foil and continue baking for an additional 20 minutes or until a toothpick comes out clean but slightly moist.
