Ingredients

Scale
  • 4 eggs
  • 2/3 cup milk (whole, low-fat, or skim)
  • 1/2 cup pumpkin puree
  • 1 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 12 slices Texas toast (or French bread, or challah)

Instructions

  1. Heat a large non-stick skillet over medium heat and melt a small amount of butter.
  2. In a rectangular baking dish, whisk together eggs, milk, pumpkin puree, vanilla extract, cinnamon, and pumpkin pie spice until well combined.
  3. Dip each slice of bread into the egg mixture to coat both sides. Cook in the skillet until golden brown on each side (about 2-3 minutes). Repeat with remaining slices.
  4. For the whipped pumpkin butter: In a mixing bowl, beat softened butter with a hand mixer until fluffy. Mix in pumpkin puree, maple syrup or honey, vanilla extract, cinnamon, and pumpkin pie spice. Beat until light and airy.
  5. Serve hot with whipped pumpkin butter on top and optional maple syrup or toasted nuts.
