Ingredients
- 4 Mini Pumpkins (optional – you can also just use ramekins)
- 2 cups Heavy Cream
- 1/3 cup Granulated Sugar (plus extra for topping)
- 4 large Egg Yolks
- 1 tsp Vanilla Extract
- 1 cup Pumpkin Puree
- 1/2 tsp Ground Cinnamon
- 1/2 tsp Ground Ginger
- 1/4 tsp Salt
Instructions
- Preheat oven to 325°F (163°C). If using mini pumpkins, cut off tops and scoop out seeds. Place in a baking dish.
- In a mixing bowl, whisk egg yolks and granulated sugar until smooth. Gradually add heavy cream while whisking. Stir in pumpkin puree, vanilla extract, spices, and salt.
- Pour custard mixture into mini pumpkins or ramekins, filling three-quarters full.
- Bake for about 30 minutes in a water bath until set but slightly jiggly in the center.
- Cool at room temperature, then refrigerate for at least two hours before serving.
- Just before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
