  • 1 cup crushed pineapple, drained
  • 1/2 cup sour cream
  • 1 1/2 cups powdered sugar
  • 23 tbsp reserved pineapple juice
  • Optional: 1 tbsp melted butter
  • Optional: 1/4 tsp pineapple or vanilla extract

Instructions

  1. Preheat your oven to 325°F (165°C) and prepare a Bundt pan by greasing and flouring it.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. Stir in vanilla extract and optional pineapple extract for added flavor.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients along with sour cream until just combined. Gently fold in drained crushed pineapple.
  5. Pour batter into the prepared pan, smoothing the top evenly. Bake for 75-85 minutes or until a toothpick comes out clean.
  6. Allow cooling in the pan before transferring to a wire rack to cool completely before glazing.
  7. For the glaze, mix powdered sugar with reserved pineapple juice until smooth; drizzle over cooled cake.
