  • 1 cup creamy peanut butter (avoid natural)
  • 1 large egg
  • 1 and 1/2 teaspoons vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 16 ounces chopped Butterfinger candy

Instructions

  1. In a large bowl or stand mixer, beat the softened butter until smooth. Add granulated sugar and brown sugar; mix until fluffy.
  2. Incorporate peanut butter until combined.
  3. Add egg and vanilla; mix well.
  4. Gradually add flour, baking soda, baking powder, and salt; mix until just combined.
  5. Fold in chopped Butterfinger bits gently.
  6. Chill the dough for at least 15 minutes in the refrigerator.
  7. Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  8. Shape dough into balls (about two inches wide) and place on baking sheets.
  9. Bake for around 10 minutes until edges are set but centers look slightly underbaked.
  10. Allow cookies to cool on the pan for five minutes before transferring to wire racks.
