- 2 cups + 2 Tbsp all-purpose flour
- 1/3 cup brown sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cubed and cold
- 1 egg
- 1/4 cup heavy whipping cream, plus more for brushing
- 1/4 cup sour cream
- 2 tsp vanilla extract
- 1/2 cup fresh peaches, diced
- 1/2 cup powdered sugar
- 1–3 Tbsp heavy whipping cream
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, brown sugar, baking powder, and salt.
- Cut in the cold cubed butter until the mixture resembles coarse crumbs.
- In another bowl, whisk together the egg, heavy cream, sour cream, and vanilla extract. Pour this into the dry ingredients and stir gently until just combined.
- Fold in diced peaches carefully.
- Turn dough onto a floured surface, pat into a rectangle about ¾ inch thick, and cut into desired shapes before placing them on the baking sheet.
- Brush tops with cream before baking for about 16 minutes until golden brown.
- Prepare the glaze by mixing powdered sugar with heavy cream and vanilla; drizzle over warm scones.
