  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces cream cheese
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Prepare the blackberry jam by simmering blackberries, water, lemon juice, and sugar in a saucepan for 20-30 minutes until thickened. Smash berries for desired texture and cool.
  2. Thaw puff pastry for 20-25 minutes at room temperature, then roll into a rectangle.
  3. Spread half of the cream cheese on one sheet of pastry and top with half of the cooled blackberry jam. Cut into 12 strips.
  4. Twist each strip gently and place on a lined baking sheet. Brush with egg wash and sprinkle with lemon-thyme sugar mixture.
  5. Bake at 400°F for 16-18 minutes until golden brown.
