  • 3 cups elbow macaroni (or your favorite short pasta)
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • Optional garnish: fresh parsley or green onions

Instructions

  2. In the same pot, sauté minced garlic until fragrant (about 30 seconds).
  3. Add elbow macaroni, chicken broth, milk, smoked paprika, black pepper, and salt. Stir to combine; bring to a gentle boil.
  4. Cover and simmer on medium-low for 8-10 minutes until pasta is tender.
  5. Reduce heat to low; stir in cheddar cheese, mozzarella cheese, and butter until melted and creamy.
  6. Return kielbasa to the pot; stir until heated through. Garnish with parsley or green onions if desired.
