  • 1 1/2 lb chicken breast
  • 1 cup cubed fresh pineapple
  • 1/2 head broccoli (about 1 cup)
  • 1/2 cup red bell pepper
  • 2 stalks green onion (green and white parts separated)
  • 2 small cloves garlic
  • 1 inch fresh ginger
  • 23 tbsp coconut aminos
  • 2 tbsp arrowroot flour
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil

Instructions

  1. Cut the chicken into small pieces and marinate with coconut aminos and arrowroot flour for at least 15 minutes.
  2. Chop broccoli, bell pepper, garlic, ginger, and green onions.
  3. In a large skillet over medium-high heat, sauté bell peppers and broccoli for 2-3 minutes; set aside.
  4. In the same skillet, sauté marinated chicken with garlic and the white part of scallion until cooked through.
  5. Add sautéed vegetables, ginger, pineapple, and teriyaki sauce; stir until everything is well coated and heated through.
  6. Garnish with the green part of scallion before serving.
