- 2 medium carrots (peeled & chopped finely)
- 4 cloves garlic (minced)
- 1 can diced tomatoes (14 oz)
- 1 can crushed tomatoes (14 oz)
- 4 cups chicken broth
- 3/4 cup uncooked ditalini pasta
Instructions
- In a large pot, brown the ground beef over medium-high heat until cooked through; drain excess fat.
- Add onion, celery, carrots, and garlic; sauté for about 8–10 minutes until tender.
- Stir in diced tomatoes, crushed tomatoes, drained beans, chicken broth, vinegar, sugar, Italian seasoning, oregano, basil, and red pepper flakes; bring to a boil.
- Reduce heat and simmer for 15–20 minutes with the lid slightly ajar.
- Add ditalini pasta; simmer until tender (about 15–20 minutes), stirring occasionally.
- Season with salt and pepper to taste before serving.
