Ingredients
- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves
- 1 tbsp lemon juice
- 2 cups cooked grains (brown rice, quinoa)
- 1 cup cherry tomatoes
- 1 cucumber
- ½ red onion
- ¼ cup fresh herbs (parsley or dill)
- 1 cup Greek yogurt (or coconut yogurt)
Instructions
- Marinate the steak: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak and let it marinate for at least 30 minutes.
- Prepare tzatziki: Mix Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl. Chill until serving.
