  • 3/4 cup small tapioca pearls (sago)
  • 3 ripe mangoes (peeled and diced)
  • 1/2 cup chilled evaporated milk
  • 1 cup full-fat coconut milk
  • 3 tablespoons condensed milk (to taste)

Instructions

  1. Cook sago pearls in boiling water for about 15 minutes until they turn translucent. Remove from heat, cover, and let sit for an additional 15 minutes.
  2. Strain the cooked sago and rinse under cold water to prevent sticking. Set aside.
  3. Blend one cubed mango with the chilled evaporated milk until smooth.
  4. In a large bowl, combine the remaining diced mango, cooked sago, condensed milk, coconut milk, and mango mixture; stir until well mixed.
  5. Chill in the refrigerator for at least one hour before serving.
