- 1 cup powdered sugar
- 2–3 tbsp lemon juice
- Optional: ½ tsp lemon zest or ¼ tsp vanilla
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, beat the eggs, sugar, oil, yogurt, lemon zest, lemon juice, and vanilla until smooth.
- Combine dry ingredients into wet ingredients; stir just until combined.
- Gently fold in the grated zucchini.
- Pour batter into the prepared pan and smooth out the top.
- Bake for 50–55 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for about 10–15 minutes before transferring to a wire rack.
- While your bread is cooling, whisk together powdered sugar and lemon juice to prepare glaze.
- Drizzle the glaze over the cooled lemon zucchini bread.
