  • 750 grams lamb (bone-in pieces such as shoulder or leg)
  • 1 cup yogurt (whisked)
  • 1/2 cup heavy cream
  • 2 tablespoons ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 34 green cardamom pods
  • 1 cinnamon stick
  • 45 cloves
  • 2 medium onions (thinly sliced)
  • 2 medium tomatoes (chopped)
  • Cooking oil or ghee (for sautéing)
  • Salt (to taste)

Instructions

  1. Prepare your ingredients by chopping onions and tomatoes, and ensuring the lamb is ready.
  2. In a heavy-bottomed pot, heat oil or ghee over medium heat. Sauté sliced onions until golden brown, then add ginger-garlic paste and cook until fragrant.
  3. Stir in the cardamom pods, cinnamon stick, cloves, turmeric, red chili powder, coriander powder, cumin powder, and garam masala; cook for about 2 minutes.
  4. Add the lamb pieces to the pot and brown them on all sides for about 5-7 minutes. Season with salt.
  5. Stir in chopped tomatoes until softened; reduce heat to low, cover the pot, and simmer for about 10 minutes.
  6. Gradually add whisked yogurt while stirring continuously to prevent curdling. Pour in the heavy cream and mix well.
  7. Cover again and let it cook on low heat for approximately 60 minutes until the lamb is tender.
