  • 2 boneless beef chops or chicken breasts
  • Salt and pepper
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tbsp honey (or mirin as a substitute)
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 2 cups cooked Japanese short-grain rice
  • Shredded cabbage, green onions, and sesame seeds for garnish

Instructions

  1. Season the beef or chicken with salt and pepper.
  2. Dredge in flour, dip in beaten egg, and coat with panko breadcrumbs.
  3. Heat vegetable oil in a skillet over medium heat and fry each cutlet for about 3–4 minutes per side until golden brown.
  4. Transfer to a wire rack to drain excess oil.
  5. In a bowl, whisk together ketchup, Worcestershire sauce, soy sauce, honey (or mirin), Dijon mustard, and garlic powder to make the tonkatsu sauce.
  6. Serve by placing rice in a bowl, topping it with sliced katsu, drizzling with sauce, and garnishing with cabbage and green onions.
