  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 2 sticks (8oz) unsalted butter, diced and very cold
  • 69 tablespoons ice water
  • 1 egg (for egg wash)
  • 1/4 cup raw or turbinado sugar (for sprinkling)
  • 2 large honey crisp apples (peeled and diced small)
  • 3 tablespoons salted butter
  • 2 tablespoons fruit juice (to replace bourbon)
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a stand mixer, combine flour, sugar, and salt. Add cold butter until the mixture resembles coarse sand.
  2. Gradually add ice water until the dough forms; chill for at least 1 hour.
  3. Prepare apple filling by cooking diced apples with butter, fruit juice, vanilla, cinnamon, and brown sugar until syrupy.
  4. Roast blackberries with sugar and vanilla until thickened.
  5. Roll out chilled dough and cut out pumpkin shapes; refrigerate.
  6. Assemble pies by adding fillings between two dough shapes; seal edges with an egg wash.
  7. Bake at 375°F for about 25 minutes until golden brown.
