Ingredients
- 1 lb boneless skinless chicken, chopped
- 1 tbsp olive oil
- 2 tbsp honey
- Juice of 1 lime
- 1 clove garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 1 ripe avocado, diced
- 1 head romaine or butter lettuce, leaves separated
- 1 cup canned black beans, rinsed
- 1 cup corn (canned, fresh, or thawed if frozen)
- 2 tbsp chopped cilantro
- 1/2 cup red onion, diced
- 1 cup sour cream or Greek yogurt
- 1 tbsp lime juice for sauce
- 1 tsp chipotle or smoked paprika for sauce
Instructions
- Heat olive oil in a skillet over medium heat. Add chopped chicken and stir in honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Cook for 8-10 minutes until browned.
- In a small bowl, mix sour cream or Greek yogurt with lime juice and chipotle or smoked paprika until smooth.
