  • 12 tbsp liquid sweetener (maple syrup or agave)
  • 1 1/2 tsp agar agar powder
  • 1 cup beet/berry/cherry juice
  • 1/4 cup berry jam
  • 1 1/2 tsp agar agar powder

Instructions

  1. Prepare the Orange Layer: In a medium saucepan, whisk together 1 cup of orange juice, 1-2 tbsp of liquid sweetener, and 1.5 tsp of agar agar powder. Let it rest for 5 minutes.
  2. Heat the Mixture: Simmer the orange mixture over medium heat while whisking for about 2 minutes. Pour into molds or a shallow container.
  3. Prepare the Berry Layer: Blend together 1 cup of berry/beet juice, 1/4 cup of berry jam, and 1.5 tsp of agar agar until smooth.
  4. Heat the Berry Mixture: Let sit for 5 minutes before simmering in a saucepan over medium heat for about 2 minutes.
  5. Combine Layers: Pour the berry mixture over the set orange layer in molds and refrigerate for at least 2-3 hours to set.
  6. Serve: Once set, remove from molds or cut into squares.
