Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter, softened
  • 2 tbsp all-purpose flour
  • 16 chocolate batons or high-quality semi-sweet chocolate

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and yeast. Gradually add cold milk while mixing until the dough is soft but slightly sticky. Refrigerate for 30 minutes.
  2. Mix softened butter with flour to create a smooth butter layer; shape and refrigerate for 30 minutes.
  3. Roll out the dough, encase the chilled butter layer, and fold it into thirds. Repeat this folding process two more times with chilling in between.
  4. After the final fold, refrigerate for at least four hours or overnight.
  5. Roll out the dough again, cut into rectangles, fill with chocolate, and roll tightly.
  6. Arrange on baking sheets to proof for an hour before baking at 400°F for about 20 minutes.
