  • ½ cup cold heavy cream
  • 2 large eggs
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend (for glaze)
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream (for glaze)
  • 1 tablespoon maple syrup
  • Pinch of kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt. Pulse briefly.
  3. Add cold butter and pulse until the mixture resembles coarse crumbs.
  4. In a bowl, whisk together heavy cream, one egg, and one yolk; add to the dry ingredients, mixing until just combined.
  5. Transfer dough to a floured surface; form into a disc and chill in the freezer for about 30 minutes.
  6. Roll out chilled dough and cut into desired shapes; place on the prepared baking sheet and brush with reserved egg white.
  7. Bake for 20–22 minutes until golden brown.
  8. While baking, prepare the glaze by whisking together powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt.
  9. Once cooled slightly, dip each scone into the glaze for an even coating.
