- ½ cup cold heavy cream
- 2 large eggs
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- 1 tablespoon chai spice blend
- ½ teaspoon kosher salt
- 1 heaping cup powdered sugar
- 2 teaspoons chai spice blend (for glaze)
- 1 teaspoon vanilla extract
- 3 tablespoons heavy cream (for glaze)
- 1 tablespoon maple syrup
- Pinch of kosher salt
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt. Pulse briefly.
- Add cold butter and pulse until the mixture resembles coarse crumbs.
- In a bowl, whisk together heavy cream, one egg, and one yolk; add to the dry ingredients, mixing until just combined.
- Transfer dough to a floured surface; form into a disc and chill in the freezer for about 30 minutes.
- Roll out chilled dough and cut into desired shapes; place on the prepared baking sheet and brush with reserved egg white.
- Bake for 20–22 minutes until golden brown.
- While baking, prepare the glaze by whisking together powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt.
- Once cooled slightly, dip each scone into the glaze for an even coating.
