  • ½ cup (40 g) sweetened shredded coconut (for filling)
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • ½ tsp coconut extract (for frosting)
  • 1 ½ cups sweetened shredded coconut (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round pans.
  2. In one bowl, whisk together the flour, baking powder, and salt. In another bowl, combine coconut milk and buttermilk.
  3. Beat the butter and sugar until fluffy; add eggs, vanilla extract, and coconut extract.
  4. Alternate adding dry ingredients and milk mixture to the butter mix until just combined.
  5. Divide batter among prepared pans and bake for 25–28 minutes.
  6. For filling, whisk together sugar, cornstarch, egg yolks in a saucepan; gradually add milk until thickened.
  7. Stir in butter, coconut extract, and shredded coconut; cool completely before using.
