- Start by preparing the cheesecake filling by mixing softened cream cheese, powdered sugar, and vanilla extract until smooth. Scoop dollops onto a parchment-lined baking sheet and freeze for at least 1 hour.
- In a large bowl, cream together unsalted butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla extract; mix well.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, stirring until combined. Fold in chocolate chips and Reese’s Pieces.
