Instructions

  1. Start by preparing the cheesecake filling by mixing softened cream cheese, powdered sugar, and vanilla extract until smooth. Scoop dollops onto a parchment-lined baking sheet and freeze for at least 1 hour.
  2. In a large bowl, cream together unsalted butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla extract; mix well.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, stirring until combined. Fold in chocolate chips and Reese’s Pieces.
  4. Preheat your oven to 350°F (175°C). Take about 2 tablespoons of cookie dough, flatten it slightly, place one frozen cheesecake filling piece in the center, cover it with more dough, and seal the edges.
