  • 2 tbsp salted butter (for cinnamon filling)
  • 1 tbsp oat flour (for cinnamon filling)
  • 2 tbsp white sugar (for cinnamon filling)
  • 1/2 tbsp cinnamon (for cinnamon filling)
  • 1/4 cup salted butter (for streusel topping)
  • 1/4 cup light brown sugar (for streusel topping)
  • 1/4 cup almond flour (for streusel topping)
  • 1/2 cup oat flour (for streusel topping)
  • 2 tsp cinnamon (for streusel topping)

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine softened butter, applesauce, eggs, sugar, and vanilla until smooth. Add almond flour, oat flour, baking powder, and salt; mix well.
  3. For the cinnamon filling: In another bowl, mix melted butter, oat flour, white sugar, and cinnamon until combined.
  4. For the streusel topping: Mix brown sugar, almond flour, oat flour, and cinnamon with slightly softened butter to form crumbs.
  5. Grease an 8×8 baking dish. Pour half of the batter into the dish; spread evenly. Layer half of the cinnamon filling on top and swirl it in. Add remaining batter and repeat with remaining filling.
  6. Bake for about 25 minutes; add streusel topping and bake for another 18 minutes until golden brown.
  7. Let cool completely before slicing. Serve warm or at room temperature.
