  • 1/3 cup molasses
  • 1/3 cup white sugar
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup vegan marshmallow cream
  • 1/4 teaspoon salt
  • 11 1/2 cup powdered sugar
  • 1 tablespoon milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, ground ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
  3. In another bowl, cream the unsalted butter and brown sugar until fluffy. Add the egg and vanilla extract; mix well.
  4. Gradually blend in the dry ingredients until a dough forms.
  5. Roll the dough into small balls and place them on the prepared baking sheet about 2 inches apart. Bake for about 10 minutes until edges are set but centers remain soft.
  6. Allow cookies to cool before frosting: beat together softened butter and sugar with vegan marshmallow cream until fluffy; gradually add powdered sugar for desired sweetness.
  7. Spread frosting on one cookie’s flat side and top with another cookie to form sandwiches.
