Ingredients

  • 12 ounces brown rice noodles
  • 1 tablespoon oil
  • 6 cloves garlic
  • 1/41/3 cup low sodium soy sauce or tamari
  • 2 tablespoons veggie broth
  • 1 1/2 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons tahini
  • 2 teaspoons sriracha
  • 1/2 teaspoon ground ginger

Instructions

  1. Boil the brown rice noodles according to package instructions until al dente.
  2. Mince the garlic finely and sauté it in a pan with oil until golden.
  3. Whisk together soy sauce, veggie broth, rice vinegar, sesame oil, honey, tahini, sriracha, and ground ginger in a mixing bowl.
  4. Combine the sautéed garlic with the sauce mixture and simmer for 2-3 minutes.
  5. Drain the noodles and toss them in the pan with the sauce until well-coated.
  6. Serve garnished with scallions and crushed peanuts if desired.
