  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 cup heavy cream
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook rotini pasta in salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup pasta water, drain, and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Sear chicken seasoned with Cajun seasoning and garlic powder until golden brown (6-8 minutes). Remove from heat.
  3. In the same skillet, melt butter and sauté minced garlic for 1 minute. Add heavy cream and milk; stir in Velveeta until melted.
  4. Mix in mozzarella and Parmesan, simmering until thickened (3-5 minutes). Season to taste. Adjust sauce with reserved pasta water if needed.
  5. Combine cooked rotini with the sauce and gently toss to coat before serving topped with chicken and garnished with parsley.
