  • 1 chicken breast, sliced
  • 1 cup cooked jasmine or basmati rice
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Optional: chili flakes, scallions, honey mustard or garlic aioli

Instructions

  1. Preheat your oven to 200C (400F). Toss carrot sticks in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until caramelized.
  2. Cook rice according to package instructions; keep warm.
  3. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add seasoned chicken slices; cook for 5–7 minutes until golden brown.
  4. Layer rice on a plate, top with chicken and roasted carrots. Garnish with scallions and optional sauces before serving.
