Ingredients
- 2 lbs potatoes (Yukon Gold or Russet), thinly sliced
- 2 large onions, thinly sliced
- 2 tbsp butter or olive oil
- 1 packet onion soup mix or 1 cup condensed French onion soup
- 1 cup beef or vegetable broth
- 1 cup shredded Gruyère cheese (or a blend of cheddar, Swiss, mozzarella)
- ½ cup sour cream or heavy cream
- Salt & pepper to taste
Instructions
- In a skillet over medium heat, melt butter or heat olive oil; add sliced onions and caramelize until golden brown (20–25 minutes). Deglaze with broth.
- Slice potatoes evenly and pat dry.
- In a mixing bowl, combine sour cream with onion soup mix and broth; stir in half the cheese and caramelized onions.
- Grease a baking dish; layer half the potatoes, then half the onion mixture. Repeat layers and top with remaining cheese.
- Cover with foil and bake at 375°F for 30 minutes; uncover and bake for another 15–20 minutes until golden brown.
- Garnish with herbs if desired and serve hot.
