  • 2 lbs potatoes (Yukon Gold or Russet), thinly sliced
  • 2 large onions, thinly sliced
  • 2 tbsp butter or olive oil
  • 1 packet onion soup mix or 1 cup condensed French onion soup
  • 1 cup beef or vegetable broth
  • 1 cup shredded Gruyère cheese (or a blend of cheddar, Swiss, mozzarella)
  • ½ cup sour cream or heavy cream
  • Salt & pepper to taste

Instructions

  1. In a skillet over medium heat, melt butter or heat olive oil; add sliced onions and caramelize until golden brown (20–25 minutes). Deglaze with broth.
  2. Slice potatoes evenly and pat dry.
  3. In a mixing bowl, combine sour cream with onion soup mix and broth; stir in half the cheese and caramelized onions.
  4. Grease a baking dish; layer half the potatoes, then half the onion mixture. Repeat layers and top with remaining cheese.
  5. Cover with foil and bake at 375°F for 30 minutes; uncover and bake for another 15–20 minutes until golden brown.
  6. Garnish with herbs if desired and serve hot.
