Ingredients
- 2 lbs beef short ribs
- 3 large yellow onions
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 garlic cloves
- 6 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 6 slices of baguette or crusty bread
- 1.5 cups shredded Gruyère or Swiss cheese
Instructions
- Slice the onions thinly and mince the garlic.
- In a Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and pepper, sear until browned on all sides, then set aside.
- Add butter to the pot, melt it, and caramelize the sliced onions over medium heat for about 25–30 minutes.
- Stir in minced garlic for another minute, then add beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Bring to a simmer.
- Return the short ribs to the pot, cover, and simmer on low heat for about 3 hours until tender.
- Serve hot in bowls topped with toasted bread slices and shredded cheese; broil until the cheese is bubbly.
