  • 2¼ tsp active dry yeast
  • 2½ cups gluten-free all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • 1¼ tsp kosher salt
  • 56 tbsp olive oil (divided)
  • Fresh rosemary

Instructions

  1. Combine water and milk in a microwave-safe measuring cup. Heat until lukewarm, sprinkle with yeast, and let sit for 5 minutes.
  2. In a stand mixer bowl, mix gluten-free flour, sugar, baking powder, and salt on low speed.
  3. Add yeast mixture and 3 tablespoons of olive oil; mix on low for 1 minute then medium-high for 6 minutes until thick yet pourable.
  4. Coat a cast iron skillet or cake pan with olive oil, then spread the batter evenly.
  5. Drizzle more olive oil on top, create indentations with fingers, sprinkle remaining salt and rosemary, and let rise for 30 minutes while preheating the oven to 350°F.
  6. Bake for 30-35 minutes until golden brown; cool for 10 minutes before slicing.
