Ingredients
- 8 oz dry rotini pasta
- 9 oz hard salami
- 6.5 oz pepperoni
- 1 cup canned artichoke hearts
- 2 cups cherry tomatoes
- 1 cup olives
- 8 oz mozzarella pearls
- ½ cup pepperoncini
- ½ cup olive oil
- ¼ cup red apple vinegar
- 2 garlic cloves, minced
- 1 Tbsp Italian seasoning
- ¼ tsp red pepper flakes
- Salt & black pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water until al dente. Drain and cool completely.
- In a jar or bowl, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, salt, and black pepper for the vinaigrette.
- Chop salami and pepperoni; halve cherry tomatoes and olives; slice artichokes and pepperoncini.
- In a large mixing bowl, combine cooled pasta with all prepared ingredients.
- Pour over vinaigrette and toss to coat evenly. Chill for at least 30 minutes before serving for enhanced flavor.
