  • 8 oz dry rotini pasta
  • 9 oz hard salami
  • 6.5 oz pepperoni
  • 1 cup canned artichoke hearts
  • 2 cups cherry tomatoes
  • 1 cup olives
  • 8 oz mozzarella pearls
  • ½ cup pepperoncini
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and cool completely.
  2. In a jar or bowl, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, salt, and black pepper for the vinaigrette.
  3. Chop salami and pepperoni; halve cherry tomatoes and olives; slice artichokes and pepperoncini.
  4. In a large mixing bowl, combine cooled pasta with all prepared ingredients.
  5. Pour over vinaigrette and toss to coat evenly. Chill for at least 30 minutes before serving for enhanced flavor.
